The carp live in the deepest waters, and a very limited number is fished; the bleak are now more or less impossible to find; our pike, perch and lake trout boast an extraordinary compactness and savouriness.
We only serve fish just fished, if it has been fished.
And then a great variety of other delicacies which the lake shores abound in: many different kinds of wild mushroom such as morels, royal agarics, finferli and other funghi more or less nobles of the undergrowth; baby lamb and kid from Tremosine and the Valle Sabbia pan fried or made into fillings for Tortelli with the giblets; quail, baby chicken, farmyard rabbit, tender milk-fed veal.
With and dressing everything, drops of our local oil, extraordinary in its differences in taste and hues of colour.
